double cheese hamburger casserole

4 oz uncooked medium noodles
1 1b ground beef
1.3 cup of chopped onion
1 tbsp chopped celery
1 can 8 oz tomato sauce
1 tsp salt
1.2 cup creamed cottage cheese
1 pkg. 30  cream cheese sofetend
1.4 cup dairy sour cream
1 medium tomato

Heat oven to 350 cook noodles as directed on pkg in a large skillet cook and stir ground beef onion and celery until meat is brown and onion is tender drain off fat stir in tomato sauce and salt heat to boiling reduce heat and simmer 1 minute remove from heat stir in cottage cheese cream cheese sour cream and noodles....pour into ungreased 1 1.2 qt casserole slice tomato...arrange on top cover and bake 30 makes 4 servings.....this came from my betty crockers piggy bank casserole recipe book....a great way to stretch a buck or too

One day i was really bored. I decided to try something different. I had tons of strawberry jam...dont laugh it was surprisingly very very good on steak and pork chops...all i did.... I took about 3 heaping tablespoons of strawberry jam and then mixed it up with just plain water....then I added lemon pepper into it and some chopped sweet onions into the mixture then I took my pork chops and fried them up tell they were a nice gold brown on both sides then placed them into a casserole dish and poured the jam mixture on top then i placed it in a preheated oven set at 350 for about an hour as always you want to make sure its done...this was both amazing on steak as well as pork chops...however with the steak i also added a little oil with it so it gave it more flavor

crispy oven fried chicken

2. 1.2 to 3 pounds of chicken pieces...skin removed or 6 skinless boneless chicken breast halves
1.3 cup of all purpose flour
2 egg whites lightly beaten
1 cup cornflake crumbs

preheat the oven to 375 lightly spray a cookie sheet with no stick spray. Set the cookie sheet aside. To coat the chicken first roll the pieces or breat halves in the flour to evenly cover all sides. Then dip the chicken in the egg whites and roll in the cornflake crunbs. Place the coated chicken pieces on the prepared cookie sheet bake for 45 to 55 minutes for the chicken pieces or 20 to 30 minutes for the boneless breast halves or until tender and no longer pink. Do not turn the chicken over during baking

tomato Mac n cheese

This is one recipe my husband really really likes....usually the pan is gone very quickly

2 cups of macaroni
1 16 ounce can tomato sauce
3 tbls chopped onions
2 1.2 cups 10 ounces sharp cheddar cheese
tomato slices )optional
cracked pepper =optional

cook the macaroni according to the package directions. Drain and set aside. Meanwhile preheat the oven to 350 for 35 min  in a medium bowl stir together the tomato sauce and onions lightly spray a 2 quart casserole with no stick spray spread a thin layer of tomato sauce mixture in the botoom of casserole place one third of the macaroni in the dish top with the remaning sauce mixture and one third of the cheese repeat everything then put on top the sliced tomatoes and cook...enjoy

south of the border tamales

one of the blessings of speaking fluent spanish is being able to make spanish food

2 cans of whole kernel corn drained....my secret i use cream style corn it gives it better flavor
2 tablespoons water
2 cups of masa harina corn tortilla mix
3.4 cup warm water
1.4 cup corn oil
2 tbls sugar
8 large dried corn husks
1 cup 4 ounce can diced green chili peppers drained

in a blender or food processor pulse blend or process the corn and 2 tablespoons water until coarsley pureed. In a large bowl stir together the pureed corn masa harina 3.4 cup water oil and sugar until a soft moist dough forms...if using the cream still corn add about a cup more of the masa..the dough should look like a soft cookie dough. If the dough is too dry add additional warm water 1 tbls at a time...set aside. Bring a large saucepan of water to a boil. Add the husks and reduce the heat. Simmer uncovered about 5 minutes or until soft. Drain. To assemble the tamales place each husk on a flat surface with its shorter tapered point towards you spread 3 to 4 tablespoons of the dough on eash husk begining 3.4 inchues from the top and ending at least 1 1.2 inches from the bottom point leaving a 1.1.2 inch border at the sides. Sprinkle 2 tbls of the cheese and 2 tsp of the chili pepers down the center of each. Fold the sides of the husk up and over the filling then fold in half to bring the top and bottom ends together and tie them closed with a piece of string. In a large skillet with a tight fitting lid place the tamales on an opened steamer basket or on a wire rack. Add enough water to the skillet to cover the bottom of the skillet making sure the water sits below the basket or rack.......note...you can add whatever you want in the center of your tamales i usually like to make chicken sour cream cheese and anything spicy with it but you could add pork or whatever you want just be sure that your meat is all precooked and shreeded before you add it with your tamales...hope you enjoy

cranberry chicken

1 can whole cranberry sauce use whole berry sauce not jellied
1 env onion soup mix
1.2 bottle creamy french dressing
5 to 6 lg boneless skinless chicken breasts cut in half white or brown rice cooked

mix cranberry sauce. onion soup mix and salad dressing in a bowl arrange chicken breasts in a casserole dish and spread sauce mixture over the breasts. Bake uncovered at 350 for 45 minutes or until done. Serve with white or brown rice. I also occasionally will sprinkle this recipe with a can of drained green beans during the last 15 minutes of cooking. There are also other variations of this recipe where you use catalina dressing instead of french and apricot preserves-jam instead of cranberries

coke chicken...crockpot

4 chicken breasts
1 c bbq sauce
1 can coke
1.2 c ketchup

lay chicken in crockpot and pour ingredients over cook on high for about 4 to 5 hours

tostadas salsa verde

4 6 in flour tortillas
3 oz shredded pepper jack cheese or whatever you have on hand
2 1.2 cup shredded poached..boiled in water...chicken
1.2 cup green salsa ....salsa verde
1.2 cup chopped cilantro
1.4 tsp ground cumin
1 cup of shredded lettuce
3 tomatoes diced
sour cream
red salsa if desiered

preheat oven to 400 arrange tortillas on baking sheet sprinkle cheese evenly over tortillas and bake until golden brown 5 to 8 minutes in medium bowl toss together chicken 1 cup green salsa 1.4 cup cilantro and cumin. Spoon mixture evenly over tortillas and bake until heated through top with lettuce tomato sour cream and salsas sprinkle with cilantro...serve immediately...ps...i would also recomend avacados...yummy

Frito casserold

1 can of chili
1 can of tomato sauce
1 1b browned hamburger )optional
shredded cheese
frito chips

put chili tomato sauce browned hamburger and some shredded cheese in a cassorole dish top with more cheese and then frito chips bake at 350 for 20 to 25 minutes until it bubbles so easy

Sarahs Sweet and sour meatballs

This was so good my husband ate 3 different plates of this last night lol and my son ate everything on his plate including the vegtables and asked for more

1 1b of ground beef ...this makes 12 big meatballs...i however doubled this recipe and was glad i did
7 to 10 saltine ritz crackers or bread
1 egg beaten
1.2 cup chopped onion or dehydrated onion...i used dehydrated and it turned out great
1.2 cup milk
1 tsp salt
1 tsp worcestershire sauce...i was out and used soy sauce instead and it turned out great
pepper to taste

preheat oven to 350 in a medium bowl combine all ingredients and mix well.. Form into 12 large meatballs. Place into a 9 by 13 casserole dish. 
Then make the sauce
1.2 cup of brown sugar
1.4 cup vinegar
1 tsp of yellow mustard
1.4 cup of barbecue sauce
1 tsp worcestershire sauce
prepare sauce combine and blend thoroughly all ingredients heat and pour over meatballs and bake in oven for 30 minutes. I noticed with my oven i had to cook them for about 45 minutes tell they were done. I put some rice in my rice cooker and we had the meatballs served on top of the rice served with vegtables and my picky 9 year old son loved it how ever i was thinking you could easily serve these on top of egg noodles or mashed potatoes or if you wanted to make just the meatballs and omit the sauce and for the sauce instead put tomato sauce on top and then bake it you could easily served these with spaghetti as well.....enjoy i know i will be making these again so yummy
