Easy Chicken Bake (crockpot meal)

Ok so I start my new job tomorrow so excited but I know i might be tired when I get home and wont feel like cooking dinner so I decided to do a crockpot meal. This cooks in the crockpot for 8-10 hours so it will be perfect when I get home.

Easy Chicken bake
6 boneless skinless chicken breasts
1 can cream of chicken soup condensed
3/4 cup evaporated milk
1/4 tsp garlic salt
1/4 tsp paprika
1/4 cup parsley fresh chopped (optional)

Place chicken in greased 4 to 6 in slow cooker mix together soup milk and seasoning pour mixture over chicken cover and cook on high heat 4 hours or on low heat 8 to 10 hours. Garnish with fresh chopped parsley if desired makes 6 servings.
Serve with brown rice and a side of cooked carrots sprinkled with dill weed. I also might add some chili powder to give it a little kick I like things a little spicy and the last little bit before i serve I think I am going to sprinkle it with cheese

Sloppy Joes (under 10)

2 pds ground beef
1/2 cup chopped onion ( I used minced onion it still gives it flavor and its cheaper only add about 1 tbls)
1/2 cup chopped celery ( I used celery salt and only about 1 tbls)
1 can condensed tomato soup
1/4 cup ketchup
1 tbl white vinegor
1/4 packed brown suger
1 1/2 tsp worchestire sauce
1/2 tsp salt
1/4 tsp garlic powder
8 hamburger buns (we go to the wonder bread store and get the buns for 79 cents a piece not bad)

brown beef in skillet cook until evenly brown and crumbly add onion and celery and cook until tender.
drain of grease
stir in tomato soup ketcup vinegor brown sugar and worchestire sauce. season with salt and garlic powder and cook until hot and ready serve on buns.
I always serve my sloppy joes with potato chips that I get at clems grocery store for 79 cents a piece

Baking Powdered Biscuits serve with caned chili or soup (under 10 dollars)

My challenge this morning..I really need to go to the grocery store but I am waiting for a 25 dollar gift rewards card from smiths before I go so I am down to 1 egg and I made up powdered milk lol it doesnt taaste to bad if you add vanilla in it. anyways I was looking for something for cheap for dinner tonight and I only had a half a cup of butter so anyways here is what I have found....

Baking Powder Biscuits

2 cups sifted flour
2 tsp baking powder
4 tbl butter or shortening
1/2 tsp salt
about 3/4 cup of milk

400 degrees for 12-15 minutes

Sift flour once measure add baking powder salt and sift again cut in shortening or butter (this is where I use my hands by rubbing the butter into the flour) add milk gradually stiring until soft dough is formed turn out slightly floured lightly need for 30 sec enough to shape roll 1/2 in thick and cut inch and a half. You can also make tiny tea biscuits. This says it will make 24 but I am not certain on that lol that is alot

Cambells beef taco skillet (under 10 dollars) for a family of four

1 pd ground beef
1 can cambells condensed tomato soup
1/2 cup salsa
1/2 cup water
6 flour tortillas cut in 1 inch pieces
1/2 cup shreeded cheddar cheese

cook the beef in a 10 inch skilltet over medium high heet until it's well browned stirring often. Pour off any fat. Stir in the soup salsa water and tortillas in the skillet and heat to a boil. Reduce heat till low cook for 5 minutes or until beef mixture is hot and bubbling. Stir the beef mixture top with cheese.

for a creamy mexican fiesta stir in 1/2 cup of sour cream
Rachero style: use corn tortillas instead of flour and shredded mexican cheese blend (however that will cost more)
Serving suggestion serve with a mixed green salad and italian dressing and corn on the cob

Strawberries n cream pie ice pops

This looked so good I had to share it and I am trying this with my fozen strawberries I bought for less then a dollar a piece.

3 cups fresh strawberries
about 1 pd chopped
1/2 cup sugar
3/4 cup plain greek yogurt (im just using plain yogurt I had on hand)
1 tsp fresh lemon juice
one 6 ounce store bought graham cracker crust crumble into course pieces (im using whatever I have in cubbord and putting it into food processor)

1. In a medium saucepan bring the strawberries and sugar to a simmer over medium heat. Lower the heat and reduce until thick and jamlike about 20 minutes (for frozen I am going longer)
2. Using food processor puree the berry mixture then transfer to a bowl. Refrigerate until cold stir in the yogurt and lemon juice.
3. Fold the graham cracker crumbs into the yogurt mixture until half blended. Spoon the mixture into a 8 to 10 count ice pop mold. Im just using my dollar store ice molds.... and freeze for 4 hours or until solid

Pasta with Minted Pattypan Squash (less then 10 dollars)

1 pound farfalle pasta (my husband used the bow tie)
3 TBLS extra virgin olive oil (wich we allready had on hand)
1 3/4 pounds small pattypan squash quartered
1 tbls fresh lemon juice plus 1 tsp grated peel
1/2 onion chopped
3 cloves of garlic, finely chopped
3/4 cup finely chopped fresh mint
3/4 cup grated parmeson cheese
salt and pepper

1. In a pot of boiling salted water cook the pasta until al dente then drain. reserving 1/3 cup of the cooking water.
2. Meanwhile in a large skillet heat 2 tbls olive oil over high heat working in 2 batches add the squash and cook turning occasionally until browned about 5 minutes. Transfer to a largge bowl and stir in the lemon juice.
3. Lower the heat to medium high add the remaining 1 tbls olive oil to the skillet add the onion and cook stirring until softened about 3 minutes. Stir in the garlic lemon peel and reserved pasta cooking water.
4. Add the pasta t othe squash mixture, Toss in the mint and cheese season with salt and pepper.

This recipe aceverages out to be about 2.48 cents a person but this feeds an army we had enough leftovers for 2 different meals it was delicious and my husband did not add the lemon wich was fine we didnt miss it and that saves even more money
